So, if you’re someone who falls in the latter category, here we bring you a lip-smacking Mexican chicken nachos recipe that is ideal to snack on during a movie night.
Marinated chicken is topped with tortilla chips, onions, bell peppers, black beans, jalapenos, a generous amount of Mexican cheese and baked until done. To begin with the recipe, first, marinate the chicken with olive oil, red chilli powder, black pepper powder, oregano and salt. Now, take a 12-inch pan, put some oil and heat it up. Add the marinated boneless chicken and cook it without closing the lid. Let the juices from the chicken ooze out. Keep stirring the chicken occasionally so that it doesn’t burn. It should be ready within 30 minutes of cooking.
To assemble the nachos, take a square-sized aluminium pan. Braise the pan with oil. Put a layer of tortilla chips. Top it with onions, green peppers, red peppers, yellow peppers, black beans, cooked chicken and jalapenos. Now, add a generous amount of Mexican cheese. Repeat the process of the above layering 3-4 times based on the size of the pan. Bake it at 180 degree C for 15-20 mins. Mexican chicken nachos are ready!
